Meal Plan 7/5-7/11

It's time for the meal plan for week two!

It's a simpler week around here, without a ton of new complicated recipes.   

Here's what we will be having this week: 

Sunday- Grilled Ribeye, Air Fryer Potatoes, and spinach salad

Jesse will grill the ribeyes while I steam green beans with garlic, salt, and pepper.  I will air fry some potatoes.  For the potatoes, I slice them thin like a potato chip, drizzle a bit of olive oil over them, add whatever seasoning I want, and air fry at 400 degrees for about 15 minutes, flipping about half way through.  Super simple and absolutely delicious!

*We don't have steaks super often, especially with the ridiculous price of beef lately, but I found ribeyes on sale for a great price at our local grocery store this weekend.*

Monday- Grilled Salmon with baked potatoes stuffed with broccoli 

 

Taco Tuesday- Southwest Chicken Tacos with low carb tortillas

 Wednesday- Chicken Pizza Casserole with Salad 

We've made this pizza casserole in the past and it's super yummy!

Thursday- Wings and vegetable medley

I thaw my wings the evening before I plan to cook them.  I use about 1/4 cup of olive oil and whatever season I am feeling to marinate them all day before we air fry them.  It takes about 15-20 minutes on 400 degrees in the air fryer and with the olive oil marinade- they get nice and crispy!

Friday/Saturday- Visiting family 

 

Breakfast- Peanut Butter Protein Pancakes

Lunch-  Leftovers or Tuna Salad 

Snacks- I'm still on a berry and nut kick!
