I'm running late on this meal plan, because it's difficult to know what fresh veggies may come out of the garden at any given time.
I have a brown thumb, but my parents have a huge garden and supply us with tons of fresh goodies during the summer. My sweet husband has made two trips to their house this weekend (it's a 2 hours drive one way!) to pick up all the good stuff. So...this meal plan is literally planned around all the fresh produce we have this week!
Sunday: Corn, Green beans with potatoes, coleslaw, sliced cucumbers and tomatoes.
Monday: Leftovers
Tuesday: Beef Tacos with low carb tortillas and black beans
Wednesday: BBQ with corn on the cob and sliced tomatoes
Thursday: Tomato and Basil Salad with Grilled Chicken and air fryer sweet potatoes
Friday: Grilled Salmon with brocoli and baked potato (and probably sliced tomatoes and cucumbers)
Saturday: Tomato Basil sandwiches on whole wheat bread with air fryer potatoes and broccoli
Breakfast for the week: Shakeology (Chocolate covered Cherry and Peanut butter banana)
Mid Morning Snack: Taco egg casserole
Mid Afternoon Snack: nuts or granola
Lunch: Whole what pitas with turkey, tomatoes, spinach and garlic pickles (homemade!)
