Meal Plan 7/12/20

It's time for another meal plan!!!   This week we are going for healthy, yet simple.  I'm throwing a few extra carbs in this week.  I have to keep my body guessing on what is going on!

Breakfast:  Shakeology Shake.  I will rotate between chocolate peanut butter, chocolate banana, and maple peanut butter.   If you've never heard of Shakeology, it's a nutrition supplement from Beachbody.  I am excited that I will soon be able to assist you in getting these products because I plan to sign up as a coach.  Don't worry- I'm not going to force anything on you!   I just love the way the Shakeology makes me feel and it tastes great, plus it is super healthy and even vegan!!!!   Anyway...

 

Lunch:  Salads with homemade ranch.  

Here's what I'm including in my salads: Spinach, tomatoes, bell peppers, onions, carrots, broccoli, cucumbers, celery, sugar snap peas,  hemp hearts, and almonds.  My plan is no meat for breakfast and lunch this week!

 

Dinners:

Sunday: Chicken/Spinach skillet meal with air fried asparagus and brown basmati rice. 

Asparagus:  Easy peasy- I throw a few seasonings on it, drizzle a little olive oil on it and air fry it for about 20 minutes.

Monday:  FRESH from the farm ground beef hamburgers grilled with whole wheat buns, vegetable trimmings and sweet potato fries.  Pretty self explanatory, but if you need ideas for the sweet potato fries, it's easy peasy!

I cut my sweet potatoes up, throw them in the air fryer with a little chili powders, salt, pepper, and cinnamon and drizzle olive oil on them.  Takes about 15 minutes for them to cook. 

Tuesday: Chicken Fingers coated with pecan flour, steamed broccoli and green beans

Wednesday:  Red Beans and Cauliflower Rice (See the bottom of this blog for that recipe)

Thursday: Grilled Pork Chops with fresh corn on the cob and asparagus (we will grill everything!)

Friday: Dinner out with friends

Saturday: Boutique event, so we will do leftovers or grab something at the event

 

Red Beans and Rice Recipe

1 lb of small red beans 
1 package of turkey andouille sausage
1 red bell pepper
1 green bell pepper
1 stalk of celery 
1 small red onion 
2 teaspoons of white pepper
0.5 tsp of cayenne 
2 tablespoons of minced garlic 
0.5 tsp of salt 
1 tsp of thyme 
1 tsp black pepper 
1 box of low sodium organic chicken broth (32 oz) 
3 cups of water 
2 bay leaves 
Rinse beans.  Add beans, broth, and water to crockpot.   Chop celery, onion, peppers, and sausage.  Add to crockpot. 
Add seasonings to crockpot.  
Stir well. 
Cook on low for 8-9 hours.   
I use the microwaveable bags of cauliflower rice that take 5-6 minutes and walaaa, dinner is served!
Homemade Ranch Dressing
I don't measure anything for this- I just mix it all together until I accomplish the taste I want.   Here's what I use in my homemade ranch:
Mayo (preferably an olive oil based or vegan mayo)
Parsley
Lemon Juice
Dill
Dried Chives
Garlic Powder
Onion Powder
Black pepper
If you want a thinner dressing you can add some type of milk to it, but then it's only good for a week or so in the fridge.   You can also substitute the mayo for Greek yogurt or sour cream!
